Here’s the recipe:

What you’ll need:

Pot of salted boiling water, 2 cups grams of macaroni pasta, 1 tablespoon of butter, 2 tablespoons of flour, 2/3 cup of milk, 2 cups of shredded cheddar and/or white cheese, and 1 cup of pumpkin puree from a small baking pumpkin (look for the label “sugar pumpkin” or “pie pumpkin” in store).

Seasonings: Salt, Pepper, Paprika, Cinnamon Spice

For the pumpkin (recommend preparing a few hours before):

  1. Heat the oven to 400 degrees F.
  2. Remove the stem and split the pumpkin in half from top to bottom, using a knife. Scoop out the seeds and fiber with a large spoon or ice cream scoop. Reserve seeds for another use/or throw out.
  3. Lay the halves, flesh side down, on a parchment paper-lined half sheet pan. Roast until a paring knife can be easily inserted and removed from the pumpkin, usually 30 to 45 minutes. Test in several places to ensure doneness.
  4. Using a large spoon, remove the roasted flesh of the pumpkin from the skin to a food processor or blender. Process/blend until flesh is smooth. Store in the fridge until ready for mac and cheese.

For the Mac and Cheese:

Step 1:

  1. Bring pot to boil, put macaroni in and cook for 10 minutes
  2. While cooking pasta, start pumpkin roux (mac and cheese sauce)
  3. Place flour and butter in pan and wait until melted
  4. Add milk, and stir until ingredients are blended together
  5. Add cheese, stir until the roux is yellow and thick
  6. Add pumpkin puree, stir until thick
  7. Take pasta out, add pasta into the pumpkin roux pan
  8. Mix together until pasta is coated in the pumpkin roux
  9. Add a pinch of salt, pinch of pepper, pinch of paprika, and mix together

Step 2:

  1. Take out of pot and place in small casserole dish
  2. Add cinnamon spice on top, sprinkle

You are ready to serve! Enjoy this great pumpkin fall dish.
